Scallops

My husband and I LOVE scallops. Jason has prepared them a couple of times for special occasions. These are the scrumptious recipes he came up with. (This is a combination of several different recipes he found.)

Bacon Wrapped Jumbo Scallops
Ingredients:
Jumbo Scallops
Bacon (cut into 1/2 strips)
Honey
Lemon Juice
Butter
Salt and Pepper to taste
Swiss cheese

Wrap each jumbo scallop in bacon. Secure with a toothpick. Sprinkle with honey, lemon juice, and butter. Season to taste. Bake at 350 until bacon is completely cooked. Top with slivers of swiss cheese.



Scallop casserole
Ingredients:
2 cups Scallops
5 slices Bacon
1 Tablespoon honey
1 Tablespoon butter
1 teaspoon lemon juice
Salt and Pepper to taste
Swiss cheese

Grease a casserole dish. Chop the bacon into pieces. Mix bacon and scallops, top with honey, butter, and lemon juice. Bake at 350 for 10-15 minutes (or until bacon is cooked). Add salt and pepper, top with swiss cheese, and serve as soon as cheese is melted.



Both recipes have the same ingredients, and the same amazing taste. They are easy to prepare and full of deliciousness! I am so grateful for an amazing husband who knows his way around the kitchen!

Mashed Potato Bowls

Kentucky Fried Chicken makes delicious mashed potato bowls. My husband, who grew up mixing his corn with his potatoes loves them! The other night he requested that I try making them at home, and boy were they good! All you need is mashed potatoes, corn, gravy, popcorn chicken, and cheese.

I made individual bowls in our single serving casserole dishes, but this would be a great casserole for a family also.

Start by filling the bottom of a oven safe bowl with mashed potatoes. Spread corn over the potatoes, top with gravy, deep fried popcorn chicken and cheddar cheese. Bake at 350 until cheese is melted. Yum!

Grandma's Baked Potato Topping

Tonight we will be having barbecued ribs and baked potatoes. Different people top their potatoes in different ways. My recent favorite topping, however, is this savory recipe from my husband's grandmother.

Ingredients:
1/2 cup butter or margarine (I use the kind that comes in a tub.)
1/2 cup sour cream
1/2 cup shredded cheddar cheese
1/4 cup bacon bits (I got a great deal on real bacon bits at a discount store this week. I have made this with imitation, but it just isn't the same.)
1/4 cup chopped green onions (I use 1/8 cup of diced, dried chives when green onions aren't available.)
Salt and Pepper to taste

Combine sour cream and margarine. Mix with a fork until well-blended. Add other ingredients, mix well, and serve over baked potatoes.

This recipe includes all my favorite toppings, and melts over potatoes with finesse and smoothness. It is simple, yet it yields a sophisticated taste. So, next time you make baked potatoes, and you are spreading the butter, scooping the sour cream, and sprinkling the cheese, try one dollop of this instead!

Menu Plan Monday 9~21~09



It has been awhile since I have participated in Menu Plan Monday. The last few weeks have been busy with getting into the routine of school, Jason's part-time job, and miscellaneous other things. I did do some freezing. I froze chicken noodle soup, minus the noodles. I also have cooked chicken, meatloaf, and corn on the cob all stashed away for later enjoyment. So, although I have not been faithful to my blog, I have been doing my best to be faithful to my home and other obligations.
This week will be a little abnormal since I will be gone to teacher's convention on Thursday and Friday. So, I will not be planning meals for those days.

Monday ~ Juicy Lucy burgers (will post recipe later)
Tuesday ~ Barbequed ribs, baked potatoes
Wednesday ~ Macaroni and cheese, lil' smokies
